Creamy Risotto with Salmon and Vegetables
Prep Time: 15 minutes
Cook Time: 30 minutes
Total Time: 45 minutes
Serves 4

Ingredients:
•2 tablespoons butter, divided
•1 tablespoon olive oil
•1/4 cup onion, finely chopped
•1/4 cup white wine
•1 cup Carnaroli rice
•3/4 pound asparagus, cut into 1-inch pieces
•3 cups chicken stock

•3/4 cup roughly chopped baby spinach
•salt and freshly ground pepper
•4 salmon fillets, about 6 ounces each
•2 tablespoons Balsamic vinegar

Preparation:
1. Your rice cooker should be set on the regular cycle while you are preheating your oven to broil. When the pan gets hot, add one tablespoon of butter and the olive oil and allow the butter to melt.
